Add the biscuits, marshmallows and glace cherries to the food processor and mix until you achieve the desired size (Thermomix: 5 seconds/speed 4)
Set aside
Add the butter and icing sugar, egg, cocoa and vanilla essence and mix (30 seconds/speed 4)
Depending on the size of your mixing bowl, either empty out the icing sugar mixture into a large bowl, and add the biscuits/marshmallows/cherries
or add the biscuits/marshmallows/cherries to your Thermomix/food processor bowl and slowly combine. (Reverse speed 1/45 seconds, but it will still need a bit of mixing together with a spatula. I prefer just doing it all by spatula to prevent the bits from getting too small!)
Line a large dish (or two) with plastic wrap and spoon the chocolate mixture into it, spreading it out to even it out.
Pop in the fridge and allow the mixture to set for 2-3 hours, then pull it out and peel the plastic off.
Cut the Rocky Road Fridge Cake into squares and store in an airtight container.
