Winter Vegetable Medley Soup

- 1 Onion
- 1 Garlic Clove
- Dash of Olive Oil
- 600g Winter Vegetable Medley
- 2 cups liquid chicken or vegetable stock (or a stock cube and two cups of water)
- A couple of sprigs of rosemary and thyme
- Salt and pepper to taste
- Cut the onion in half and add it and the garlic clove to the Thermomix.
- Add a splash of olive oil and mix Speed 4/ 10 Seconds, then 100C/speed ⅔ minutes.
- Next, add the winter veg and cook 15 minutes/Varoma/speed 3
- Add the herbs
- For a chunky soup, mix Speed 4/10 seconds or for a smooth soup, mix speed 5/30 seconds
