Winter Vegetable Medley Soup

Ingredients
  • 1 Onion
  • 1 Garlic Clove
  • Dash of Olive Oil
  • 600g Winter Vegetable Medley
  • 2 cups liquid chicken or vegetable stock (or a stock cube and two cups of water)
  • A couple of sprigs of rosemary and thyme
  • Salt and pepper to taste
Instructions
  1. Cut the onion in half and add it and the garlic clove to the Thermomix.
  2. Add a splash of olive oil and mix Speed 4/ 10 Seconds, then 100C/speed ⅔ minutes.
  3. Next, add the winter veg and cook 15 minutes/Varoma/speed 3
  4. Add the herbs
  5. For a chunky soup, mix Speed 4/10 seconds or for a smooth soup, mix speed 5/30 seconds
