Keto / Low Carb Three-Cornered Leek and Cheese Scones

Ingredients
  • 60g melted butter
  • 225g almond flour
  • 1 egg
  • 50g grated mozzarella
  • 20g chopped three cornered leek (you can also use wild garlic)
  • 1.5 tsp baking powder
  • salt and pepper to taste
Instructions
  1. Turn the oven on to 180C/356F
  2. Melt the butter over low heat and roughly chop the three-cornered leek.
  3. In a food processor, combine the almond flour and egg, and drizzle over the melted butter.
  4. Add the mozzerella, chopped leek and baking powder, salt and pepper and mix till well combined.
  5. Tip the mixture onto a baking tray and flatten with your fingertips to about 1.5cm (1 inch) thick.
  6. Cut into squares and space evenly on the tray.
  7. Bake for 10 - 12 minutes and serve with lashings of butter
