Gorse Shortbread

Ingredients
125g/4½oz unsalted butter, softened
55g/2oz caster sugar plus extra to finish
180g/6oz plain flower
handful of gorse flowers
Instructions
Preheat the oven to 190C/170C Fan/Gas 5.
Beat the butter and the sugar together until smooth.
Stir in the flour until thoroughly combined. Add the yellow gorse flowers.
Turn onto a clean work surface.
Knead the dough just enough to bring the mixture together in to a smooth ball of dough.
Roll into a ‘sausage’ shape and refrigerate for an hour.
Slice the ‘sausage’ into shortbread rounds and place onto a baking tray.
Bake in the oven for 15–20 minutes, or until pale golden-brown.
Sprinkle with caster sugar.
Set aside to cool on a wire rack.
