Gorse Shortbread

Ingredients
  • 125g/4½oz unsalted butter, softened
  • 55g/2oz caster sugar plus extra to finish
  • 180g/6oz plain flower
  • handful of gorse flowers
Instructions
  1. Preheat the oven to 190C/170C Fan/Gas 5.
  2. Beat the butter and the sugar together until smooth.
  3. Stir in the flour until thoroughly combined. Add the yellow gorse flowers.
  4. Turn onto a clean work surface.
  5. Knead the dough just enough to bring the mixture together in to a smooth ball of dough.
  6. Roll into a ‘sausage’ shape and refrigerate for an hour.
  7. Slice the ‘sausage’ into shortbread rounds and place onto a baking tray.
  8. Bake in the oven for 15–20 minutes, or until pale golden-brown.
  9. Sprinkle with caster sugar.
  10. Set aside to cool on a wire rack.
